Capcom explains why Okami HD is exclusive to the PlayStation 3:
Okami HD is a beautiful looking game and one would wonder why Capcom’s not choosing to release it on the Xbox 360 as well. Everyone knows multiplatform releases do much better financially, and Okami could certainly work on a regular controller. Christian Svensson of Capcom recently explained why their focusing on one platform;
We wanted to focus the title on a single HD platform and given how well Okami worked on Wii, applying that functionality to Move made a lot of sense.
