The only way you can update now is by using Itunes, pushing the update manually rather then OTA but of course you'll need the updated firmware. Using likely to reverse your jailbreak, but that's the price to update your iPhone and iPod touch.
Update: It appears that the the IOS 5 Beta 4 jailbreak is now available so those who update using the iTunes method pushing it manually, so no worries. It appears that the OTA is unavailable for those who jailbroken and thats it. It doesn't block the the tether jailbreak or anything, it just prevent a jailbroken iDevice to be update to the latest firmware via OTA
